The aim is my present research to introduce the wild edible vegetables, and focused in the epidermal anatomy and their taxonomic importance. The quantitve analysis of the larger epidermal cell is Allium gigntium and Tulipa stellata.the larger stomata is Allium gigntium and Tulipa stellata.The smaller epidermal cell of centurea calcitrapa and smaller stomata is centurea calcitrapa . These variations differentiated the wild vegetables taxonomy proved a significant tool for the resolution of taxonomic confusion. Antioxidant compounds in wild vegetables play an important role as a health protecting factor. Scientific evidence suggests that antioxidants reduce the risk for chronic diseases including cancer and heart diseases .The higher antioxidant properties of edible vegetables is Lamium amplexicuale, Sonchus asper, Taraxicum officinale.Vicia faba ,Centaurea, Oxalis carniculata ,Veronica aquolus.The phytochemical studies are the Tannin, saponin. And Flavionid are present and the Alkaloid and sponin are absent, in Allium gigntium and stellaria media the Alkaliod and sponin are present.
