Lycopene

The deep red color of the ripe tomato fruit and related products is mainly due to lycopene. Lycopene is the predominant carotenoid in tomatoes, followed by [alpha]-carotene, [beta]-carotene, [gamma]-carotene, and phytoene, as well as by other minor carotenoids.
